    Vegetarian Taco Soup

    • 1). Put stock pot on stove over medium heat. Pour oil into pot. Chop onions into small pieces (about the same size as the chunks in whatever salsa you're using) and cook for 6-8 minutes, stirring frequently.

    • 2). Once onions have cooked, add can of crushed tomatoes and water. Stir. Add taco seasoning, garlic, pepper and salsa. Raise heat to high and bring soup to a boil, stirring frequently. Once soup boils, lower heat again to medium and add re-fried beans. Stir until bean mixture dissolves.

    • 3). Simmer soup for 10 minutes. Turn heat off. Take 1 1/2 cups of cheddar cheese and stir into soup.

    • 4). Spoon soup into bowls. Dab some sour cream in the center of soup and top with a sprinkle of cheddar cheese and tortilla chips.
