Instructions on How to Roast a Duck
- 1). Preheat the oven to 250 degrees Fahrenheit. Poke holes through the outer layer of fat on the duck using a small, sharp fork to only penetrate the fat and not into the meat.
- 2). Season the outside of the duck to your liking, using only salt if you're new to cooking duck. Place the onion inside the cavity of the duck.
- 3). Place the duck in an aluminum foil-lined roasting pan. Put the pan into the oven and roast the duck for an hour and a half.
- 4). Remove the pan from the oven and flip the duck over in the pan. Place back into the oven and roast for another hour and a half. Remove duck from oven and turn the oven up to 400 degrees Fahrenheit.
- 5). Place the duck back into the oven when the new temperature is reached. Cook for 20 minutes, remove and rotate the duck, then place it back into the oven for another 20 minutes.
- 6). Let the duck cool slightly before carving. Reserve the duck fat collected in the aluminum foil for future cooking of potatoes. Reserve the duck bones and scraps for making duck stock.
