A grilled salmon spinach frittata can serve as a perfect meal to serve at a family brunch, a bridal shower potluck, or a rainy Northwestern Sunday morning.
The ingredients are simple, and are very likely already lingering in your pantry.
In a skillet suitable for the oven, combine half a dozen eggs, 1 chopped red onion and 3 small chopped potatoes (sauteed beforehand), with a cup of spinach and a cup of grilled salmon.
When eggs are set, place the skillet in the oven until the frittata is puffed up and golden brown.
