Bok Choy - Glossary of Chinese Ingredients and Cooking Terms
Definition: Bok choy, a member of the Brassica family, is a type of cabbage. While several varieties of bok choy exist, the most common is the distinctive vegetable with the white stem and dark green leaves available in most supermarkets. Baby bok choy, also called Shanghai bok choy, is a smaller version of the same vegetable. Besides being used in soups and stir-fries, bok choy is also featured in braised dishes, such as Lion's Head Meatballs.
Store bok choy in the vegetable crisper section of the refrigerator. Rinse thoroughly before using.
