Ingredients

• 1/3 cup plus butter, room temperature
• 1 cup sugar, divided
• 3 large eggs, separated
• 2 lemons, juiced and zested
• additional lemon juice to make 1/4 cup
• 1/4 cup flour
• 1/4 teaspoon salt
• 1 cup whole milk
• Optional: blueberries

• Prep Time: 15 minutes
• Cook Time: 55 minutes

• Total Time: 70 minutes
• Yield: Serves 6

Preparation

Preheat oven to 350 degrees F. Grease and flour  1-1/2 quart low-sided baking dish. Cream butter and 3/4 cup sugar. Add egg yolks, lemon juice and zest. Beat well. Add flour and salt. Beat until well mixed. Set aside.

Beat egg whites on high until foamy. While beating gradually add remaining 1/4 cup sugar. Continue to beat egg whites until are still and glossy.

In a figure-eight pattern, carefully stir whites into yolk mixture.

Spoon into prepared baking dish. Bake for 42 to 55 minutes until golden brown. Serve with optional blueberries or other fruit.
