How to Debone Poultry
- 1). Locate the neck opening and look for where the rib cage attaches to the wing. Use a knife to slice the ligaments to detach the wings from the rib cage.
- 2). Grab the wishbone with your fingers and pull it out of the carcass. Use a knife to cut the cartilage that attaches the breastbone to the wishbone.
- 3). Place your hand inside the opening in the neck and pull the meat away from the bones all the way around the backbone and rib cage.
- 4). Use a knife to cut away the skin from the wing bones and leg bones, then slowly pull out the bones.
- 5). Use a knife to cut the skin and breast meat free from the rib cage, and then gently pull out the bones out through the cavity.
- 6). Enter through the cavity to cut the bones away from the thigh meat. Your chicken is now deboned.
