Traditionally, kale is strictly a winter vegetable in the Netherlands, where it has long been a cold weather staple. In fact, this healthy leafy green is not usually consumed in the Netherlands until after the first winter frost, which is said to make it sweeter. But now that kale has become a trendy health food elsewhere, we're starting to see new versions in Dutch supermarkets, such as baby kale, which can be enjoyed year round. We love baby kale in these scrambled eggs, with a little grated Dutch cumin cheese.

Ingredients
  • 4 slices spelt bread 
  • 8 eggs
  • 1 1/3 cup (40 g) baby kale
  • 1¾ tbsp (25 g) best quality butter (roomboter)
  • 1 tbsp sour cream
  • 2 tbsp Dutch cumin cheese (Leidsekaas), grated
  • Salt & freshly milled pepper
  • YOU WILL NEED:
  • toaster (or toast the bread in your oven)
  • Mixing bowl
  • Frying pan
  • Wooden spatula

  • Prep Time: 5 minutes
  • Cook Time: 5 minutes


  • Total Time: 10 minutes
  • Yield: Serves 2-4.


Preparation

Toast the spelt bread in a toaster or under the grill.

Break the eggs into a small mixing bowl and beat with a whisk until light and fluffy.

Melt the butter in a frying pan over a medium-high heat. Add the eggs and baby kale to the pan and season with salt and pepper. Use a wooden spatula to gently stir the eggs. Keep doing this, but don't stir too vigorously. You want to keep the consistency smooth, creamy and completely lump-free.

When the egg mixture begins to set, turn off the heat and add the sour cream and Dutch cumin cheese. Taste, and add more seasoning, if necessary. Serve with the toasted bread.

Tips:
  • What is cumin cheese? Simply stated, it's Dutch cheese studded with cumin seeds. The original, from the city of Leiden, is dry, piquant and somewhat tart. It has a fat percentage of 40%. Ageing intensifies the cumin flavor. Dutch cumin cheese is known as komijnekaas, Leidse kaas and Boeren Leidse (literally "farmhouse Leiden cheese"). The latter is an artisan variety with a fat percentage of 20% and a dark red rind with the Leiden city crest (keys) on it. Learn more about Dutch cheese varieties.
