- 1). Pour 4 cups of grade A maple syrup into a cooking pot. Add 1/3 cup of butter and 1 tsp. of lemon extract. Stir over high heat until the butter melts.
- 2). Boil the syrup until it reaches a temperature of 233 degrees Fahrenheit on a candy thermometer. Do not stir the syrup mixture while it boils. Watch the syrup to ensure that it does not boil over. Remove the syrup from the heat source once it reaches the desired temperature.
- 3). Allow the syrup to cool down to 110 degrees Fahrenheit. Stir the syrup with a wooden spoon for 5 minutes. Do not stir for too long, or the syrup will harden in the pot.
- 4). Sprinkle confectioner's sugar into the candy mold to dust the mold lightly. Pour the maple syrup into the mold and allow it to cool completely.
