How to Do Lettering for Cake Decorating
- 1). Using a spatula, mix 1 cup of butter cream icing in a small bowl with 1/2 teaspoon of piping gel. The icing should have a thin consistency for the best results.
- 2). Cuff the top half of an icing bag. Slide the plastic coupler base into the bottom of the bag. Fit a small, round icing tip over the top. Screw the coupler ring over the tip to secure the base, bag and tip in place.
- 3). Scoop about 1/4 cup of the icing mixture into the piping bag. Uncuff and twist the top of the bag to keep the icing in place.
- 4). Practice writing on a sheet of plastic wrap spread over a flat surface. Hold your bag at a 90-degree angle with the tip lightly touching the surface. Right-handers should position the bag at a 3 o' clock position. Left-handers should hold the bag at a 9 o' clock position.
- 5). Squeeze the bag to start the flow of icing. Allow the icing to flow out onto the surface. Lift the tip slightly from the surface as you pipe a single line to create part of a letter.
- 6). Finish a line by releasing the pressure on the icing bag. Bring the tip of the bag down to connect the icing back down to the surface. Pull the tip away.
- 7). Clean the tip and begin creating another line, allowing the second line to touch the first. This will help form a letter. When you are comfortable practicing on the plastic, switch to your cake.
