      Bologna is a large city in Northern Italy known for its culinary traditions such as Bolognese sauce, a meat-based pasta sauce named after Bologna, where it originated. The local cuisine also centers on meat and cheese components, particularly cured pork meats like prosciutto, an Italian bacon; mortadella, a large, cured sausage; and salami, a fermented sausage that was once a main food of Italian peasants.
