Cruise-Control Pork Tenderloin Recipe
This pork roast is actually roasted on your car engine during a long trip, but you may also roast it in a traditional oven. The Dijon mustard, wine, and rosemary add flavor and help tenderize as well.

At home or on the road, blend the Dijon mustard, wine, red onion, rosemary, salt, and pepper. Spread the split surface of the pork tenderloin with the mixture and press lightly together, then wrap with foil. Find a medium-hot spot on the engine and turn once during cooking. Total cooking time should be about 4-1/2 hours.
Yield: 3 to 4 servings
