How to Prepare New York Beef Sirloin Steak
- 1). Coat the steaks in peppercorn on all sides by pressing the steaks into the peppers. Salt the steaks according to your preference.
- 2). Pour two tablespoons of olive oil into a pan and cook it on high for one minute. Put the steaks into the oil. If the pan is not large enough to accommodate all of the steaks, then just cook two at a time. If you want medium rare steaks, then cook the steaks for three minutes for each side. You can add time if you prefer your steaks to be cooked more thoroughly. When the steaks are done, put them on a serving plate.
- 3). Pour 1/4 cup of the shallots, finely chopped, into the olive oil. Place the pan on a medium heat burner for two minutes. Add 1/3 cup of bourbon to the olive oil shallot combination and place the pan back over the stove on low heat for two minutes, or until the bourbon is nearly evaporated. Pour in one cup of beef broth and let it boil until it is reduced and thickened. This typically takes three to five minutes. Add in the cream and butter and warm up the mixture.
