    • 1). Locate the fire box, often found at the side or beneath the grill. Fill the fire box with charcoal and barbecue wood chips; for the best results, use less charcoal than wood chips.

    • 2). Crumple up a few sheets of newspaper and add it to the fire box. Ignite the crumpled newspaper using a barbecue lighter.

    • 3). Locate the water pan of the char broil, often located in a draw directly beneath the grill, and fill it with water. Place a full water pan, if the char broil barbecue you're using doesn't have a built-in water pan, on the grill side of the barbecue.

    • 4). Close the lid and allow the temperature to rise to 225 degrees Fahrenheit. Place the meat in the char broil barbecue and close the lid. Stoke the fire by adding more charcoal and wood chips when the heat drops or the fire gets too low.

    • 5). Keep the lid closed for most of the cooking process; open the lid during the last hour or thirty minutes of cooking to check the progress.
