Rosemary Focaccia Recipe


This focaccia recipe makes one large focaccia bread baked in a single 18 × 13 sheet pan, or two 9 × 13 pans. Or you can halve the recipe to make a single 9 × 13 pan.

The water should be between 100° and 105°F. Not too hot. It shouldn't burn your hand, but should instead feel like a lukewarm bath. If the water's too hot, it'll kill the yeast.

Note that one tablespoon of active dry yeast is enough for six cups of flour, but a single packet is only 2½ teaspoons — slightly less than a tablespoon. So to make sure you have enough, either open another packet, or simply use the kind of active dry yeast that comes in a jar.

Ingredients
  • 1 Tbsp active dry yeast
  • 2 cups warm water
  • 750 grams bread flour (about 6 cups)
  • 1 tsp sugar
  • 2 tsp salt
  • 1/2 cup olive oil, divided
  • Fresh rosemary
  • Kosher salt, to taste


Preparation
  1. In the bowl of a stand mixer fitted with the dough hook, combine the yeast, sugar and water and stir to dissolve. Let it sit for 15 minutes. Then stir in the flour, salt and 2 Tbsp of olive oil.
     
  2. Mix on the lowest speed for about 8 to 10 minutes or until you have a smooth, elastic dough. Don't overmix.
     
  3. Oil your pan (or pans) generously with about 4 Tbsp of olive oil.
     
  4. Roll out the dough until it's about ¾-inch thick and the size of your pan, then place it in the pan. Stretch the dough a bit to make it fit if you have to.
     


  1. Let the dough sit in a warm place for an hour to 1½ hours or until it doubles in volume.
     
  2. Preheat your oven to 425°F.
     
  3. Brush the top of the dough with the remaining oil, then use your fingers to poke indentations into the top. I'll stretch my index, middle and ring fingers into a sort of claw and then press the claw into the dough at regular intervals. This produces the characteristic dimpled top of classic focaccia bread.
     
  4. Finally, sprinkle with fresh rosemary leaves and Kosher salt and bake for 30 minutes or until the top is golden brown.
