How Do I Make Wine with Nuts and Berries?

    • 1). Pick the fresh berry of your choice. Choose dark, ripe berries for the best results. Wash the berries, and remove all leaves and stems.

    • 2). Combine the water and sugar, and bring it to a boil in a large pot. Stir until the sugar has completely dissolved in the water.

    • 3). Put all of the berries inside a nylon straining bag, and place in the bottom of the bucket. Crush the berries in the bag using your hands, a kitchen mallet or other means.

    • 4). Pour the boiling sugar-water mixture over the berries, and add the acid blend, tannin and yeast nutrient. This process will extract the flavorful berry juice.

    • 5). Allow the contents of the bucket to cool to room temperature, and then add the crushed Campden tablet.

    • 6). Cover the bucket with the airtight lid to begin primary fermentation. Secure the lid with additional large rubber bands or bungee cords. Allow the mixture to ferment for 12 hours.

    • 7). Add the activated wine yeast, and cover again with the airtight lid. Stir the mixture daily for one week.

    • 8). Remove the nylon bag after the week is up, and suspend it over the bucket for one hour to allow all of the juice to drip into the bucket.

    • 9). Add pectic enzyme, and wait 12 hours. Pour the contents of the bucket into a secondary container for fermentation, and secure the airlock.

      Wait two months. Test the wine, and sweeten with additional sugar if needed. Ferment the wine for six months total. Test the wine again once a month, and sweeten with sugar as desired.

      Transfer the wine to a dark glass bottle, and age it for another six months.

      Collect 25 immature nuts about 1 inch in diameter each. The nuts should be undamaged for best results. Wash the nuts and then air dry.

      Cut the nuts into quarters, place in the secondary container and add the berry wine. Cover the container, and set aside in a cool, dark place for six weeks.

      Remove the nut sections from the wine by pouring the wine through a sieve.

      Add the vodka and 4 additional cups of sugar to the berry wine. Mix thoroughly until the sugar dissolves.

      Pour the wine back into bottles and store. Serve chilled and enjoy.
