How to Store a Fondant Iced Cake

    • 1). Place the fondant cake inside an opaque cake box or container to prevent light from fading the icing. An opaque cake box does not allow light to contact the icing, so the cake is kept in darkness. Select a box that fits the cake snugly because any light that contacts the cake will cause it to fade or crack. The amount of time it takes light to damage a fondant cake depends on the icing color and moisture.

    • 2). Sit the covered cake at room temperature away from heat, direct sunlight and fluorescent lights. The intensity of sunlight and fluorescent lights can cause the icing to become too warm. Store the cake in a cool and dark location such as a kitchen cabinet for best results.

    • 3). Leave the cake at room temperature for up to five days. Store the cake in the refrigerator only if it has perishable fillings. Perishable fillings may consist of cream cheeses, fruit curds, mousses or any ingredients that need refrigeration. The cake may become stale and the icing may harden within two to three days, depending on the ingredients used. The icing may start to become dry after four days.
