How to Freeze Peaches in Freezer Bags
- 1). Select ripe, mature peaches. Avoid peaches that feel soft or look green. About five peaches will fit in each quart sized freezer bag.
- 2). Combine 2 cups of granulated sugar and 6 cups of water in a sauce pot to make a light sugar mixture. The sugar mixture prevents the peaches from dryness, oxidation and freezer burn.
- 3). Place the sauce pot over medium heat. Stir the sugar slowly until it dissolves. After the sugar dissolves into the water, remove it from the stove top. Allow the sugar syrup to cool completely before you add the peaches.
- 4). Rinse the peaches under cool running water. Fill a large cooking pot with water. Bring the water to a full boil and drop the peaches into the water. Leave the peaches in the boiling water for 20 to 40 seconds.
- 5). Remove the peaches with a slotted spoon. Place them in a large bowl of ice water for three to four minutes.
- 6). Slide the skins off the peaches. Slice the peaches into wedges or cubes. Remove any brown or bruised areas and the pits.
- 7). Sprinkle 1/4 cup of fresh lemon juice over the peaches to prevent them from browning. Combine the peaches with the sugar solution.
- 8). Fill freezer storage bags with the peaches and the solution. The solution needs to cover the fruit completely; otherwise, the fruit may darken or become freezer burned. Remove as much air as possible from the bags. Leave 1/2 inch of head space in the storage bags.
- 9). Thaw the peaches in the refrigerator overnight.
