Cooking on a Sailing Yacht - Home Made Burgers in Fresh Brown Bread Rolls
In all my recipes I have used "Cups" as the measurement tool as boats often do not have scales on-board.
All these recipes are forgiving on quantities and can be made using a normal mug instead of American Cup measure.
The burgers and rolls can be made a few hours in advance and make a great lunch or evening meal.

Ingredients
- 3 cups warm/ hot water (not boiling)
- 2 packages of dry yeast
- 1/4 cup honey
- 5 cups white flour
- 3 tablespoons of melted butter
- 1/3 cup honey
- 1 tablespoon salt
- 3 1/2 cups whole wheat flour
- 2 tablespoons butter, melted
- In a large bowl mix the warm water, yeast, and 1/4 cup honey
- To this mixture sift in 5 cups white bread flour stirring to combine
- Let set for 30 minutes until big and bubbly (I normally let mine stand in the oven - whilst it is turned off)
- Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt
- Stir in 2 cups whole wheat flour
- Flour a flat surface and knead with whole wheat flour you can just about pull it away from the work surface but it is still sticky to touch.
(This may take an additional 2 to 4 cups of whole wheat flour) - Place in a greased bowl, turning once to coat the surface of the dough.
Cover with a dishtowel - Let rise in a warm place until doubled - again I recommend using the oven but leaving it turned off
- Punch down, and take a handful of dough
- Place in greased baking tin in a row.
Do not worry if each roll touches the other, You can pull them apart when baked - Allow to rise for a further 30 minutes
- Bake in a preheated oven for 20 minutes
- Remove from oven, separate and brush the tops of rolls with melted butter stop them going hard when cool
- 1 large onion chopped into very small pieces
- 400g - 500g of Mince Beef
- Two egg yokes
- 1/2 cup breadcrumbs
- 2 tbl spoons Tomato Ketchup
- A pinch of Salt and Pepper
- 1/4 cup white flour
- Fry the Onions for 5 - 10 minutes until golden brown
- Place the onions into a large mixing bowl and add the mince beef, egg yokes, breadcrumbs, ketchup, salt and pepper
- With your hands mix together the ingredients until well bound together
- Separate out a small handful and shape into a round ball.
Flatten into a burger shape - Coat the burger with a small amount of flour
- Place on a plate and repeat until all the mixture has been used.
Place the burgers in the fridge - When ready to eat, fry or BBQ the burgers until cooked through (4-5 minutes)
