The following are a couple of easy camping recipe's that my Mom used to make for us.
You can prepare some of the vegetables ahead, then store in Ziploc bags.
Just try to plan ahead to make things easier on yourself and don't forget to pack it with the rest of the camping gear.
Good planning is essential, and will make mealtime less stressful on the little ones.
Mom's Fried Potatoes Ingredients: ½ lb bacon 1 medium onion peeled and chopped 1 green pepper, chopped 6-8 medium sized russet or Idaho potatoes 8 oz pkg sharp cheddar cheese Salt and pepper to taste Method: You will need a campfire grate or grill rack over an open fire.
Place skillet on the grate.
Immediately lay bacon even in the skillet allowing it to fry until crispy.
Remove the bacon to drain on a paper towel.
Add potatoes to the skillet leaving the bacon grease.
This will add flavor to the potatoes.
Add the onion and the green pepper.
Salt and pepper to taste.
Cover with a lid for about 5 minutes.
Use a spatula to turn the potatoes over carefully when they achieve a golden brown color.
When the potatoes are soft when pierced with a fork and they have achieved the crispiness that you like they are done.
Break the bacon into pieces, then sprinkle on top of the potatoes.
Add the cheese covering evenly.
Place a lid on the skillet to finished cooking just to melt the cheese.
Serve with a cucumber /tomato salad or fresh fruit such as melon.
Hobo Dinners This recipe will serve 4, double the ingredients for more servings.
Ingredients: Heavy duty Foil 1 lb lean ground beef made into four patties 1 medium onion, chopped 5-6 potatoes, washed, sliced (can leave skin on) 5-6 raw carrots, washed, sliced (can leave skin on) Salt and pepper to taste.
Method: Place 4 pieces of foil on counter or table.
Should be about 18 in x 18 in or large enough to hold each dinner.
Place ground beef patty in center of each foil pieces.
Sprinkle about two tablespoons of onion on each patty.
Add the equivalent of one potato and one carrot, you can add more vegetables if desired.
Salt and pepper to taste.
Fold foil together then fold down tightly onto food, then again on each end forming a pouch.
Throw onto hot coals or place into a preheated 300 degree oven for about an hour.
To test for doneness you can pierce pouch with a fork, if the veggies give you no resistance your meal should be finished cooking.
You can eat directly from the pouch.
Leftovers are already wrapped.
