Crisp and Chewy Ranger Cookies Use Crisp Rice Cereal and Chocolate Chips
This classic cookie uses crisp rice flake cereal for a wonderful crunch. Don't use puffed rice cereal; the flakes are necessary to keep the crisp and crunchy texture. Yum.

Ingredients
- 1 cup sugar
- 1 cup brown sugar
- 1 cup butter, softened
- 2 tsp. vanilla
- 2 eggs
- 2 cups flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 cups crisp rice flake cereal, slightly crushed
- 1 (12-ounce) package semisweet or milk chocolate chips
- Prep Time: 20 minutes
- Cook Time: 10 minutes
- Total Time: 30 minutes
- Yield: 60 cookies
Preparation
Preheat oven to 375 degrees. In a large bowl, combine sugars and butter and beat until light and fluffy. Stir in vanilla and eggs and beat until combined. Add flour, baking powder, baking soda and salt and mix to combine. Stir in cereal and chocolate chips. Drop dough by teaspoonfuls 2" apart onto parchment lined cookie sheets.Bake cookies at 375 degrees for 8-11 minutes or until cookies are light golden brown.
