Kids Meals That Include Raw Vegetables
- Make a carrot and broccoli salad, topped with sweet cranberries. The added sweetness encourages your kids to eat the salad. Chop 2 cups of broccoli and mix with dark, leafy green lettuce like kale or romaine. Add 1/2 cup of slivered almonds and 1/2 cup of dried cranberries. Add 1 cup of chopped carrots and 3/4 cup of cashews. Serve with honey mustard or a sweet dressing of your child's choosing.
- A Greek salad provides your child with plenty of raw vegetables in one sitting. Chop romaine lettuce, carrots, pitted black olives, Roma tomatoes, green pepper and one large red onion. Mix and add croutons. You can also add whole pitted black olives rather than chopped olives. Make enough to feed the whole family.
- Make your child a vegetable wrap that includes plenty of raw chopped vegetables like cucumbers and tomatoes. Add lettuce and honey mustard or ranch to add more crunch appeal and flavor. Wrap the vegetables and other ingredients in a spinach soft tortilla wrap.
- Cook your children a traditional cooked spaghetti meal that includes their favorite tomato sauce and spinach infused or whole wheat noodles. Before serving, add carrot shavings to the top of the spaghetti and mix in, so that your children will naturally eat the carrot shavings rather than picking them off. Provide a cucumber salad as well to ensure that your children get plenty of raw vegetables in addition to their favorite cooked meal.
