How to Ferment and Pickle
- 1). Wash cucumbers or other vegetables thoroughly.
- 2). Put the dill, garlic, peppers and spices, if using, on the bottom of the large container.
- 3). Place the vegetables on top of the dill mixture.
- 4). Dissolve salt in water to create a brine. Add the vinegar. Pour brine over vegetables and dill mixture.
- 5). Cover the mixture with a heavy plate or other weight. Place a towel or cloth over the container to keep out dust.
- 6). Store the pickle container in a cool place. Ideal temperature for fermentation is between 55° and 80° F.
- 7). Allow the pickles to ferment for three to four weeks. Check the pickles several times a week. Skim off mold, if it forms. Wash the plate as needed and put it back in place.
