Bring 4 quarts of water to a boil in a large pot for cooking the pasta. - 2
In skillet, simmer the 1/2 cup of the half-and-half and nutmeg over medium heat. Whisk the cornstarch with the remaining 1/4 cup half-and-half. Whisk cornstarch mixture into the simmering mixture. Continue simmering until it thickens slightly; about 1 minute. Cover and keep warm off the heat. - 3
When the water for cooking the pasta is boiling, stir in salt and add the pasta. Cook, stirring often until the pasta is almost tender but still a little firm. Reserve 1/2 cup of the cooking water, then drain the pasta and return it to the pot. Cover and set aside. - 4
Return the half-and-half mixture to medium-low heat and whisk in the reserved pasta cooking water. Slowly whisk in the Parmesan cheese. - 5
Place cooked pasta on a large serving platter. Add the sauce and toss to coat. Sprinkle with chopped basil or parsley. Serve and enjoy!
