And we're preparing our Miso Salmon dish tonight. Now we're on to the most important part of the meal, the vegetables. Yep, that's right the vegetables. This is what gives everything its extra little bit of punch, particularly the rice. So, first thing that we're preparing today are our peas. These little guys, you can either use snow peas or you can use a sugar snap pea. Very easy to prepare. These have already been washed. All you want to do is remove the tip. For those of us with a little bit of a fingernail, that's the greatest tool in the world for cleaning these. Otherwise, you can use your kitchen shears or a paring knife. Just clip the tip and these are ready to go. And for those of you that are Mel Brooks fans, you'll appreciate what I'm talking about. These are all ready to go. We have our steamer ready. We'll just hold that for a little bit because we don't really want to put these on until we're just about ready to finish our salmon. Next thing that we're going to prepare are the vegetables that are going in our rice. As I said before, this is a lime cilantro rice but it's also got a couple of extra ingredients in it to add a little bit of extra flavor and nutrition. This is a great time to sneak in something like spinach which adds a lot of nutrition and a little bit of extra roughage. Kids won't know the difference. You want to take your spinach and just gently chop it. And that will add an extra little bit of color to your rice. Green onions to taste. I like mine with a little extra punch. So I'll use a whole bunch of green onions. Just take those, slice them up. You want to get a little bit of the tops because you want the color to offset the white of the rice. And it just adds just a little bit of extra color and eye appeal to your meal. And there we go with our onions.
