Substitutes for Eggs in Coffee Cake
- There are a number of different commercial egg replacers on the market that are available in powdered form. Eggless Cooking recommends substituting 1/2 tsp. of commercial egg replacer and 2 tbsp. of water in your batter in place of eggs. Commercial egg replacer is entirely flavorless and will not change the taste of your coffee cake. You can purchase commercial egg replacer at most grocers in the baking aisle.
- Mashed banana can easily replace eggs in your coffee cake recipe as an emulsifier. Substitute 1/4 cup of mashed banana for every egg in your coffee cake recipe. The banana will slightly change the flavor of your coffee cake and you may need to bake the batter for longer than you would when using eggs.
- Like banana, applesauce can be used as a substitute for eggs in your coffee cake, though it will add a slight apple flavor to your cake. Replace each egg in your recipe with 1/4 cup of applesauce. Your coffee cake may need to bake longer when using applesauce.
- You can combine 1 tsp. of baking soda with 1 tbsp. of vinegar to create a suitable replacement for eggs in your coffee cake recipe. Both apple cider and white vinegar can be used in your cake without having much effect on the color or flavor of your coffee cake.
- A quarter cup of silken tofu can be used to replace each egg in your coffee cake. When replacing eggs with tofu, you may notice that your coffee cake will not brown as deeply as it would if you were using eggs. Tofu naturally has no flavor of its own and will absorb the flavors of the other ingredients, so using silken tofu will not affect the flavor of your coffee cake.
