TVP Taco Seasoning

- 1 teaspoon salt - 1 tablespoon paprika - 1 tablespoon chili powder - 1 teaspoon turmeric - 1 teaspoon nutritional yeast - 1 teaspoon corn meal - a dash of ground sage - 1 teaspoon sugar - TVP - water - 1 medium onion (optional) - 2 garlic cloves (optional) Mix all of the ingredients, minus the onion and garlic, in with dry TVP about a pound wet which equals approximately 3/4 cup dry.
I am terrible with measuring unless I'm baking.
Add hot water enough to make TVP look like soup and mix well.
The TVP absorbs all of the water pretty quickly.
You can serve just like this.
-This part is optional- I like to chop up an onion and cook it in some olive oil with a sprinkle of salt (kosher is what I use) give it a stir.
Allow to brown a bit and add garlic.
When you start to smell the garlic it's done cooking.
Quickly throw in the TVP mixture in with the onion and garlic (quickly so the garlic doesn't burn).
Mix well.
You aren't trying to cook the TVP you just want to add the onion and garlic flavor to it.
This gives it a smokey more full bodied taste.
I have served this meal to many meat eaters who all tell me it is delicious! They always seem to go back for seconds.

TVP is healthy, tastes delicious and is easier to make than ground meat.
I think we all to often discount healthier options thinking they cost more or don't taste good.
I truly believe this recipe will prove that mind set wrong.
