How to Braise a Sirloin Tip Steak

    • 1). Combine the mustard, dark brown sugar, paprika, dried thyme, ground ginger and salt in a small bowl. Blend with your fingers and rub over both sides of two sirloin tip steaks.

    • 2). Heat the olive oil over high in a skillet. Brown the steaks for two minutes per side. Set the browned steaks aside.

    • 3). Add the butter to the skillet, and then reduce the heat to medium. Add the mushrooms and scallions to the skillet. Stir with a wooden spoon until the mushrooms brown.

    • 4). Pour the ale and Worcestershire sauce into the skillet, and stir with a wooden spoon. Bring the heat to high, and boil for four minutes.

    • 5). Place the steaks into the skillet and cover. Reduce the heat to low and cook the steaks for eight minutes per side. Serve with sauce from the skillet drizzled over the top.
