Indian food is characterized by its liberal use of spices and ingredients such as ghee (clarified butter), mustard oil, whole wheat flour, basmati rice and pulses (crops harvested for their seed, mostly beans and peas) like chickpeas, channa, mung or urad dal. Though there are regional differences, Indian food is overwhelmingly vegetarian, although you can find dishes made with chicken and lamb. The unassuming Midwestern state of Ohio may seem a strange place to look for the cuisine of the East, but Ohio is the home of many Indian restaurants, featuring various dishes and styles. - Amul India is in Dublin, Ohio, near Columbus.
