Black
They are known for the best processing as they go through deep oxidization process. Leaves after plucking are withered and rolled for lighter bruising so that they can release their juice. After this process, they are left in humid condition for absorption of oxygen. During this process the color of leaves become coppery red from green while the liquor prepared through these leaves shows distinct black color. Later the fermentation is stopped and leaves are dried after heating.
White
For the preparation of this type of tea, only very young leaves and buds are plucked and they are air dried and steamed. Its fragrance and sweet taste after brewing enhances its taste.
Green
The least oxidized leaf is known as green tea which is just heat fired or steamed a little before drying. Their taste seems slightly sweet, nutty or grassy but they cannot leave bitter flavor like fully fermented once.
Rooibos
In the mountainous region of South Africa, Rooibos are grown and are named after a red bush. They are supposed to be caffeine free naturally. Nowadays, they are preferred by people all over the world for their anti oxidant character, fruity and sweet flavor.
