Mandel Brot - Bite Size Nut Cookies My Mom Used to Make
Do you remember when your mom used to bake.
You'd wake up smelling that fragrance and hop out of bed, ready for milk and that cookie or cake you loved.
That's what we used to do too.
These are bite-size, and generally well received at a party or at work or anywhere you take them, so be sure you make tons.
Gather your ingredients, so everything is there as you need it, then, 1.
BEAT together in your mixer, using the flat paddle 2 large Eggs 1 cup Oil 1 cup White Sugar 1 T Vanilla 2 T Real Lemon (not fresh lemon) 2.
SIFT in a separate bowl 3 ½ cups All Purpose Flour 1 ½ tsp Baking Powder 1 tsp Cinnamon (a tad more if you like the taste of Cinnamon) ½ tsp Salt 3.
GRADUALLY add the flour mixture to the liquid mixture, noticing the batter will be fairly tight as you progress.
Once it gets to that point, you will need to mix in the nuts and raisins (see below) with your hands.

ADD1 cup ground Nuts (we use Walnuts) 1 cup Raisins 5.
SHAPE into small balls by taking a teaspoonful of dough then round it into a ball in your hand.

Place on a parchment covered cookie pan 7.
BAKE in a 350 oven for approximately 30 minutes if you are using a gas oven OR in a 325 oven for approximately 30-35 minutes if you have an electric oven.
If your oven is calibrated correctly, the cookie should come out golden and when it is done, will be hard and crunchy like a Biscotti.
NOTE: My mother used to bake by taste, so you may want to play with the Real Lemon a little (you can buy it at your local supermarket), as well a the Cinnamon, nuts and raisins.
